Why I Love This Recipe

Our family loves crispy chicken tenders with BBQ, honey mustard, and ranch. Yummy!

Ingredients You'll Need

4-6 chicken breasts
1 egg
1/4 c. milk
1/2 c. white rice flour
1/2 c. cornstarch
freshly ground sea salt and freshly ground pepper to taste


Cut chicken breasts into strips. Put into a bowl of cold salted water and allow to brine for 30 minutes to an hour. Drain chicken. In a large bowl, mix together egg and milk. In a plastic bag mix together white rice flour, cornstarch, and salt and pepper to taste. Put a few pieces for chicken in the plastic bag coating with flour mixture, take them out and set aside on a plate. Repeat until all are coated.

Next, dip the chicken in egg mixture, then put again into plastic bag mixture to coat well, remove and set aside. Heat oil in a large skillet or deep fryer, when hot fry chicken in hot oil until crispy and golden. Instant thermometer needs to register 165F. Serve immediately with sauces of your choice.
