Why I Love This Recipe

This is great for a quick week night dinner!

Ingredients You'll Need

1 pound boneless chicken breast or thighs
Water or stock to cover
1 10.5oz can condensed cream of mushroom soup
8 oz. Velveeta cheese cut into small cubes
1/2 cup crushed Doritos or toasted breadcrumbs


Preheat oven to 400 degrees.

In a medium sized pot, simmer the chicken in lightly salted water until cooked. Remove the chicken from the pot, reserve 1/2 cup of the liquid.

Once chicken is cool enough to handle, in a medium bowl, shred the chicken and combine with the reserved liquid, Velveeta cheese and cream of mushroom soup.

In a small casserole dish, add the chicken mixture, top with crushed Doritos or toasted breadcrumbs.

Bake for 15 to 20 minutes or until the top is golden brown and the cheese is melted. Enjoy!
