Why I Love This Recipe

from my mom's recipe files (from a recipe card of my sister's)

Ingredients You'll Need

3-4 chicken breasts
1 pound sausage
1 cup flour
1 cup vegetable oil
1 bell pepper
1 small onion
4 green onions
2 ribs celery
2 tablespoons dried parsley
4 chicken bouillon cubes
1 tablespoon minced garlic (jarred is fine)
1 can Ro-Tel tomatoes
1 small can tomato paste
1 bay leaf
Tony's Chachere seasoning
rice, prepared according to package directions


First, cube chicken. Put a little oil in skillet and brown chicken. Sprinkle with Tony's while browning. Make dark roux from flour and oil. Cut up all veggies. Saute in margarine. After chicken is done, pour into roux. Add three cups water or to your liking. Pour sauteed veggies in. Cut sausage and put in roux. Put in bouillon, tomato paste, rotel, bay leaf, and parsley. Simmer 30 minutes. Serve over rice.
