Why I Love This Recipe

Grandma's said eat all your colors everyday to stay healthy. Well this recipes has most of your colors in it!


Ingredients You'll Need

Meat Mix:
3 Lbs ground chicken (if grinding your own use mix of boneless skinless thighs and breasts)
1 1/2 yellow cooking onion diced
1-2 stalks celery with leaves diced and destringed
1 red bell pepper or equivalent pimento peppers in the jar diced
1 C frozen peas and carrots
Opt: 1/2 C frozen corn
Garlic powder
thyme
poultry seasoning
2 tsp granular chicken bullion (or ramen noodle seasoning pkts)
Opt: sage
Opt: Seasoning salt
Opt: blk pepper
1/2 cup cream of chicken soup
1/4 C milk
Opt: 1/4 C farina or cream of wheat (Do they even still make farina?)
My grandma used regular seasoned bread crumbs but I liked Chicken stove top stuffing ground up in food processor better for this recipe.
Optional Sauce:
2 cans plus remainder of loaf cream of chicken soup
1 1/2 cans whole milk
1-2 tsp granular chicken bullion
poultry seasoning
1/2 yellow cooking onion rough chopped
1 stalk celery chopped in bite sized chunks and destringed
Opt: salt and pepper
Opt: 1/2 C sour cream


Directions

Meat: In 1 bowl add chicken, onion, celery, peppers, peas, carrots, opt corn and mix together. In 2nd bowl Add milk and cream of chicken soup and stir then add spices garlic powder, poultry seasoning, thyme, and Opt: sage, seasoning salt or blk pepper if using and stir. Then pour 2nd bowl over 1st bowl and mix together. Add Opt: farina or cream of wheat and bread crumbs or stuffing mix and mix together. If not using sauce grease the baking pan and add a lil water put in meat mix and shape in loaf shape. If using sauce no need to grease pan just cook in sauce don't add sour cream 'til its done and out of the oven then stir in the sour cream if your using it.
Sauce: Add everything to a bowl and mix except the opt sour cream if your using it and pour sauce over loaf cover and bake at 350F abt an hour uncover and bake till browned.
Stir in sour cream if your using it
