Chicken souvlaki with tzatziki

Why I Love This Recipe

This is a beautiful light meal that you can add to or eat on it's own all year round


Ingredients You'll Need

1 small red onion, sliced into rings
1/2 tsp caster sugar
2 tbs apple cider vinegar
1 cup (280 g) thick Greek-style yogurt
2 tbs crushed garlic
Finely grated zest and juice of 1/2 lemon
1 cucumber, grated, squeezed to remove excess liquid
2 tbs extra virgin olive oil
1 barbecue chicken, meat shredded
1 tsp dried chilli flakes
1 tbs chopped fresh oregano or dried
4 pita breads, warmed
2 tomatoes, sliced


Directions

Place onion in a bowl with sugar, vinegar and 1 tsp salt. Set aside for 5 minutes.


To make tzatziki, combine yoghurt, grated garlic, lemon zest and juice, and cucumber in a bowl. Season


Heat oil in a pan over medium-high heat. Add chicken to the pan with chilli, oregano and crushed garlic, and cook, stirring, for 2 minutes or until crisp.


Top pita with chicken, drained onion, tomato and tzatziki
