Chickpea Cookie Pie

Why I Love This Recipe
I love this recipe because it adds a healthier aspect to our late night cravings. When you are wanting something sweet, you do not feel too guilty afterwards!
Ingredients You'll Need
2 cans Garbanzo Beans or White Beans
1 cup Oat Flour (or all purpose flour)
¼ cup Plain/Vanilla Greek Yogurt
¼ cup Nut Butter
1 scoop ONNIT Vanilla Protein
2 tsp. Vanilla Extract
2 tsp. Baking Powder
½ tsp. Salt
1 ½ cup Coconut Sugar
1 cup Cocoa Nibs (or Chocolate Chips)
Blend everything in a food processor or blender
Place batter into a bowl, fold in the chocolate chips with a rubber spatula.
Pour batter into a greased pie pan, or a 9X9 baking dish (this will make cookie bars)
Bake in an oven at 350 degrees for 35-40 min.
Let the pie cool for about 15 min before removing from the pan.
