Ingredients You'll Need
1 can (15 oz) chickpeas, drained and rinsed
1 ripe avocado
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, sliced
1/4 cup feta cheese, crumbled (optional)
2 cups mixed greens or spinach
4 large whole wheat or flour tortillas
Juice of 1 lemon
1 tbsp olive oil
Salt and pepper to taste
Fresh herbs like parsley or cilantro (optional)
Directions
In a medium bowl, mash the avocado with a fork. Add lemon juice, olive oil, salt, and pepper, and mix until well combined.
Add the chickpeas to the bowl and lightly mash some of them with the back of a fork, leaving some whole for texture.
Add the cucumber, tomatoes, red onion, olives, and feta cheese (if using). Mix until everything is well combined.
Lay out the tortillas on a clean surface. Divide the mixed greens or spinach evenly among the tortillas.
Spoon the chickpea and avocado mixture onto each tortilla.
Roll up the tortillas tightly, folding in the sides as you go to enclose the filling.
Cut each wrap in half and serve immediately, or wrap in foil or parchment paper for an on-the-go option.
