Chicky Salad

Why I Love This Recipe
A vegan take on chicken salad!
Ingredients You'll Need
1 can of Chickpeas
½ yellow onion
2 stalks celery
10 cherry tomatoes
1 green onion
½ green Bell Pepper
½ cup vegan mayo or mashed avocado
½ teaspoon Salt
½ teaspoon Garlic Powder
¼ teaspoon Ground Black Pepper
½ tablespoon Nutritional Yeast
Directions
1. Drain and rinse the chickpeas.
2. Mash the chickpeas (until about half smashed) and add in the mayo or avocado.
3. Chop the vegetables and add them into the chickpea mixture. Add in the spices and mix well.
4. Serve in lettuce cups, or on bread and enjoy!
