Why I Love This Recipe

I like this recipe for many reasons. It can be stretched by adding more vegetables, protein, noodles, etc. The sauce can also be frozen for future uses.


Ingredients You'll Need

Sauce
½ cup peanut butter (I sometimes use more)
¼ cup soy sauce
2 Tbsp sugar
3 Tbsp sesame oil
1 ½ Tbsp Chinese black vinegar or worcestershire sauce
2 tsp chili oil (or to taste)
¾ cup chicken broth or hot water
1 Tbsp minced ginger
1 Tbsp minced garlic

1 pound Chinese noodles or fettuccine
Assorted vegetables, chicken, egg, etc


Directions

The recipe calls for just combining all the sauce ingredients and mixing with noodles and vegetables.
I prefer the flavor of cooked ginger and garlic so I usually saute the ginger and garlic, then add the remaining sauce ingredients to the same pan.
The sauce thickens as it cools so there is no need to keep the stove on while adding the additional ingredients or the sauce will appear too thin.


TIPS:
Sometimes the sauce appears broken when you first start combining. Just keep stirring.

I like to rinse the noodles in cold water before combining them with the sauce to prevent it from being too starchy and becoming gummy.

This can be served hot or cold with vegetables, shredded chicken, and/or shredded egg omelette.
