Ingredients You'll Need

Meatballs
2 pound ground beef
1/2 tsp cumin
2 tsp minced garlic
3 eggs
1/4 cup bread crumbs
salt and pepper -- to taste

Sauce
6 chipotle chiles in adobo sauce
6 medium tomatoes,roasted & peeled
1 cup chicken broth
2 tsp minced garlic
1/4 tsp cumin
1 tbsp oregano
2 tbsp bacon dripping
salt and pepper to taste


Directions

Combine beef, cumin, garlic, eggs, bread crumbs, and salt and pepper to taste.


Mix well. shape the mixture into medium-size meatballs.


Puree the chiles, tomatoes, broth, garlic, cumin seeds, and oregano.


Strain.


Saute' the puree in drippings and season with salt and pepper to taste.


Bring sauce to a boil.


Cook the meatballs in the Chipotle Sauce for about 25 minutes.
