Ingredients You'll Need

40g coconut sugar
50g quinoa flakes
1/2 egg
1/2 teaspoon vanilla extract
70g white flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
50g butter
50g dark chocolate chips


Preheat oven to 180C, line baking tray with non stick baking paper.

Cream the butter and coconut sugar together until pale and creamy. Add the egg and vanilla and beat until well combined. Sift the flour, baking powder and cinnamon together, add to the butter mixture and beat on a low speed until combined. Add the quinoa flakes and chocolate, stir until well combined.

Roll tablespoons of the mixture and place on baking trays 4cm apart. Flatten balls slightly. Place the tray in preheated oven and bake for 12 minutes or until golden.

Remove from oven, cool on tray for 5 mins, then set aside on a wire rack, to cool completely.
