Ingredients You'll Need

1 cup (225g) unsalted butter, softened
1 3/4 cups (350g) sugar
4 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 cup (120ml) milk, at room temperature
2 cups (240g) all-purpose flour
3/4 cup (75g) cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (120ml) hot coffee or hot water, divided


Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.

In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Stir in 1/4 cup of the hot coffee or hot water until well incorporated.

Divide the batter evenly among the prepared muffin cups, filling them about 3/4 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Once the cupcakes are cooled, prepare your favorite frosting or ganache. Decorate the cupcakes with the frosting or ganache, and top with sprinkles, chocolate shavings, or any other desired toppings.
