Why I Love This Recipe
Almond butter is high in Vitamin E, magnesium, and healthy fats, making it a nutrient-packed choice for baking!
Ingredients You'll Need
1/2 cup creamy almond butter (stirred well if natural)
2 tablespoons butter, softened
1/3 cup monkfruit sweetener (or your preferred keto-friendly sweetener)
1 large egg
1 teaspoon vanilla extract
1/4 cup cocoa powder
1/3 cup oats (can use quick oats for a softer texture)
1/3 cup ChocZero chocolate chips (or sugar-free chocolate chips)
Directions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the almond butter, softened butter, and monkfruit sweetener until smooth and creamy.
Beat in the egg and vanilla extract until incorporated.
Sift in the cocoa powder and mix well. Fold in the oats and ChocZero chocolate chips to create a thick, chocolatey dough.
Scoop about 1 tablespoon of dough, roll into balls, and gently flatten onto the lined baking sheet.
Bake for 8-10 minutes, or until the edges are set. These will remain soft and fudgy!
Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring to a wire rack to cool completely.
Pairs Well With
Enjoy these with warm almond milk or a herbal tea like peppermint to complement the chocolate and almond flavors.
