"Delicious chocolate pudding using avocados!"
Serves 4 | Prep Time 10 minutes | Cook Time No cooking, just food processor, 30 secondsWhy I Love This Recipe
When the avocados ripen too fast, perfect way to use. Absolutely provides richness and pudding consistency without any avocado flavor. This is a super quick, no cook, recipe that provides elegant results!
Ingredients You'll Need
Avocados, two large
Cocoa powder, unsweetened, preferably dark
Sugar, preferably raw, finely ground
Almond Milk
Coconut Manna
Vanilla
Spice - to taste - cinnamon or allspice
Directions
Using the food processor as your mixing bowl, add 2 large avocados, chopped up
Add 1/2 Cup unsweetened Cocoa Powder
Add scant 1/2 cup sugar - raw is always best, but unless finely ground, the larger grains give a crunchy element to the pudding. Can always put in blender/processor to more finely grind before starting recipe.
Add 1/3 Cup Almond milk
Add one tablespoon Coconut Manna. This is the pureed coconut flesh that gives wonderful flavor. If not on hand, can use Coconut milk instead of Almond milk.
Add two teaspoons of Vanilla
Optional: add some spice like cinnamon or allspice
Process in food processor for about 30 seconds. Can eat immediately or put in refrigerator for up to 3 days
Pairs Well With
Plain or with whipped cream, a few raspberries would lend perfect color
