Chocolate Banana Bread Pudding

Bread pudding is a traditional dessert in our family. What better bread to use than an already sweetened banana bread?
Ingredients You'll Need
For Banana Bread
o Full box Louisiana Banana Bread
o 2 large eggs
o 1/3 cup milk
o 1/2 cup melted butter
o 2 mashed bananas
For Pudding Custard
o 4 large eggs
o 1 2/3 cup milk
o 1 cup sugar
o 1 teaspoon vanilla extract
o 2 cups fresh banana, cubed
o 1/2 cup chocolate chunks
Directions
For Banana Bread
o Preheat oven to 350°F. Lightly grease standard 9x5 pan with cooking spray or butter.
o Combine eggs, butter, milk, and bananas. Add mix. Fold together until batter is smooth, approximately 1 to 2 minutes.
o Pour batter into pan and spread, filling corners and leveling top.
o Bake at 350°F for 55 to 60 minutes or until a toothpick inserted in center comes out clean. Allow to cool for 10 to 15 minutes before removing from pan.
For Pudding Custard
o Preheat oven to 350°F. Cube prepared Louisiana Banana Bread (preferably day-old bread) into 1/2-inch squares.
o Combine bread, banana, and chocolate together in medium size bowl. Blend eggs, milk, sugar, and vanilla extract. Combine all ingredients and soak for 15 minutes. Transfer mixture to pan and press down firmly.
o Bake for 25 minutes covered and 15 minutes uncovered. Cool on wire rack 30 minutes before slicing. Dollop with whipping cream and drizzle with chocolate syrup if desired.
