This recipe is from my Bubbie, who came over from Budapest during WWII. She used to make them every Chanukah! Mandelbrot is very similar to the Italian biscotti, but not quite as hard.
Ingredients You'll Need
1 cup sugar
1 cup oil
3 eggs
1-1/2 tsp vanilla extract
3 cups flour
1 tsp baking powder
1/2 tsp. salt
6 ounces chocolate chips
1 cup nuts (optional)
cinnamon/sugar combo
Directions
Preheat oven to 350
In a large bowl or stand mixer, beat the sugar, oil, eggs, and vanilla together.
In a medium bowl, mix together the flour, baking powder, and salt.
Slowly add the flour mixture to the sugar mixture. Mix until completely blended.
Mix in the chocolate chips and nuts (optional)
Spray a cookie sheet with cooking spray and form into two short, fat, rectangular "loaves" (like big rectangle cookies).
Bake for approx. 35 minutes or until golden brown.
Let cool just a bit before sprinkling with cinnamon/sugar mix.
Cut before it cools completely.
