Why I Love This Recipe

My mother-in-law gave me this recipe almost 30 years ago. It was the first time I had tasted zucchini bread and, to this day, it is the only recipe I have ever used. Around the holidays, I like to wrap a loaf in cellophane, tie it with a ribbon and give it as a gift.


Ingredients You'll Need

3 cups flour
3 eggs
2 cups sugar
1 cup oil
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup sour cream
2 cups grated zucchini
1 cup chocolate chips (I use mini-chocolate chips, so they don't sink)


Directions

Preheat oven to 350 degrees F. Grease two loaf pans (I use the foil ones).


Mix together all of the ingredients except the zucchini and chocolate chips until well-blended. Stir in the zucchini and chocolate chips. Pour into the 2 loaf pans and bake for 1 hour and 15 minutes.
