Why I Love This Recipe

Ingredients You'll Need

1 cup whipping cream
1oz semi sweet baking chocolate, chopped
1 oz unsweetened baking chocolate, chopped
1 cup half & half
1/2 cup sugat
half 1/3 cup cocoa powder
4 egg yolks
2t vanilla
pinch of salt


in small saucepan melt both chocolates in a 1/4 cup whipping cream on medium heat set aside when done

in medium saucepan heat half & half on medium heat until steamy, set aside when done

In small bowl mix together sugar and cocoa set aside

place yolks in mixer bowl start mixing on speed 2 slowly add sugar mixture

then add chocolate mixture (you may have to stop the mixer a few times)

then add half & half mix well

return mixture to medium saucepan on medium heat stir constantly until it gets very steamy

pour into bowl, mix in remaining cream, vanilla, and salt

chill overnight (at least 6 hours)

pour into ice cream maker and process until desired consistancy then freeze at least 2 hours.

I was looking to make a real ice cream, so I modified this recipe and came up with a great and easy chocolate ice cream recipe. 2 C milk 2 C heavy cream 1.5 C of Light Brown sugar 6 egg yolks 1 heaping C of milk chocolate chips...more if you are daring...or maybe use your favorite bitter sweet chocolate. Step 1 Whisk the yolks until they turn lemon colored. Warm them until steam in a double boiler. Step 2 Add brown sugar and heat over the double boiler while whisking until the brown sugar is incorporated. Step 3 Add 1/4 C of whipping cream to loosen up the mixture. Step 4 Add the chocolate chips and keep heating until they are completly incorporated and the mixture is smooth. Step 5 Add the rest of the cream and stir it in until smooth. Step 6 Turn off the heat and Add the milk. Step 7 Freeze in your favorite ice cream freezer.
