We love these rich, fudgy brownies and enjoy flavoring them in a variety of ways. They are loved by everyone.

Ingredients You'll Need

2 eggs
1 c. sugar
1 stick butter, melted
1 t. mint extract
1/2 c. cocoa
3/4 c. GGFG Baking Mix (or Mix of your choice, check to see if it has zanthum gum already added)
3/4 t. zanthum gum
1/2 c. York peppermint patties, chopped and divided
1/2 stick butter
2 c. confectioner's sugar
1 t. mint extract
milk for consistency
green food coloring, if desired


In a bowl beat eggs with sugar. Add melted butter and extract, beat well. Add cocoa, GGFG Baking Mix, and zanthum gum and stir until moistened. Then beat well. Add chopped York peppermint patties then spread batter into 8"X8" parchment paper lined baking pan and bake in an oven preheated to 350F for 25-35 minutes or until knife comes out with moist crumb. Remove from oven to cool before frosting. Meanwhile, cream butter and begin to add confectioner's sugar and milk until frosting is spreading consistency. Stir in extract and food coloring, if desired. Frost brownies before serving. Freezes well.
