Chocolate Mousse

Why I Love This Recipe
So easy to whip up, and so quick to vanish!
Ingredients You'll Need
2 x 100g bars dark chocolate
a small knob of butter
2 tbsp golden caster sugar
300ml double cream
1 tsp vanilla extract
2 large eggs
a splash of brandy
cocoa powder for dusting
1 orange or a handful of strawberries
Directions
Leave the chocolate bars in their wrappers and bash against the counter. Tip the chocolate chunks into a heatproof mixing bowl with the butter, then place over the pan of simmering water and leave to melt, stirring occasionally.
Meanwhile, add 2 tbsp of sugar to a pretty serving bowl with 300ml of cream and 1 tsp of vanilla extract and whip until silky with soft peaks.
Separate the eggs, adding the yolks to the whipped cream and the whites to an empty mixing bowl. Stir the yolks through. Add a pinch of salt to the whites and whisk really well until stiff. By now the chocolate should be melted so add it to the whipped cream with a splash of brandy and stir through. Gently fold in the egg whites then put into the freezer to set or the fridge if serving later.
