Why I Love This Recipe

This is my favorite cookie recipe. It is Perfect to make with kids since it is mostly dump and stir.


Ingredients You'll Need

Part A
2 cups sugar
3 Tbsp cocoa
1 stick butter
½ cup milk
Dash of salt

Part B
1 Tsp. vanilla extract
½ cup smooth peanut butter
3 cups quick-cooking oats


Directions

Lay out a couple of sheets of parchment or wax paper on the counter before you begin. Bring ingredients from Part A to a rapid boil over medium-high, stirring constantly (be patient!). Bring to a rapid boil for 1 minute. Remove from heat and (working quickly) add ingredients from Part B. Once everything is thoroughly mixed, drop by the spoonful onto the parchment paper.


Notes: have all ingredients from Part B measured and ready because you’ll need to work quickly. I usually add the oats after the peanut butter and vanilla are fully incorporated for consistency. If your cookies don’t set up, the mixture didn’t boil long enough (still tasty with a spoon). If they set up quickly but are a little dry, the mixture boiled too long. These should be candylike cookies.
