Chocolate Peanut butter Poptarts

Why I Love This Recipe

Chocolate Peanut Butter Poptarts! They have a rich chocolate flavor with a hint of peanut butter fudge in the center. Delicious!


Ingredients You'll Need

DOUGH
5 Tbsp unsalted butter, softened
1/2 tsp vanilla
1/2 cup flour
1/4 cup powdered sugar
2 Tbsp natural baking cocoa
FILLING
1 cup peanut butter
2 Tbsp butter
2 Tbsp powdered sugar
1 tsp vanilla
FROSTING
1 stick of butter
1 bag of semi-sweet chocolate chips
1-2 Tbsp water
OPTIONAL
Sprinkles
Crushed Peanut Butter Cups
Sparkling Sugar
Additional Chocolate Melted for Drizzling


Directions

MAKE THE DOUGH


Preheat oven to 325


Cream the butter and vanilla.


Mix remaining ingredients in a separate bowl then add them to the butter mixture. Mix until combined and a dough forms. It will be crumbly at first.


Set the dough aside while you make the filling.


MAKE FILLING


Mix all filling ingredients until smooth.


ASSEMBLE


Roll the dough to about 1/8 inch (thin). Cut into the desired shape. You can cut squares or rectangles with a knife or use a cookie cutter to cut squares or circles.


Put a dollop of filling on half of the cut pieces of dough, flattening it out a little but leaving room to seal around the edges.


Put another piece of cut dough over the filling (like a sandwich) and seal tightly around the edges using your fingers.


Place on a cookie sheet lined with parchment paper.


Repeat until the dough is all cut and filled.


Bake for approximately 15-20 minutes. They should appear slightly dry, darker, and should be firm to the touch but not burnt. Keep an eye on them as each oven is different.


Let them cool. While they are cooling, prepare your frosting.


MAKE FROSTING


Melt the chocolate chips and butter over low heat in a double broiler. If heating directly on the stove, stir continuously and watch closely.


When it is melted and smooth, add water 1 Tbsp at a time to thin it out. It should be smooth and thin enough to spread easily without being runny.


When poptarts are cooled, ladle the frosting onto the tops. It should coat the poptarts nicely without running off the edge. It should harden up pretty quickly. If you want to add candy, sprinkles, sugar, etc. do it now as the frosting is setting. Once the frosting is set, you can top the poptarts with additional drizzles of dark chocolate, white chocolate, melted peanut butter chips, etc. Anything you like!
