Ingredients You'll Need

For Brownies:
2 eggs
1 c. sugar
1 stick butter, melted
3/4 c. GGFG Baking Mix (or mix or your choice)
3/4 t. zanthum gum
1/2 c.cocoa
1/2 t. peppermint extract

For Chocolate Peppermint Buttercream
1/2 stick butter
2 c. confectioner's sugar
1/4 c. cocoa
1/2 t. peppermint extract
milk for consistency
crushed peppermint candies


Directions

Using stand or hand mixer, beat eggs and sugar together. Slowly beat in butter. Turn off mixer, add Baking mix, cocoa, zanthum gum, and extract. Pour into 8" square pan lined with parchment paper and bake in an oven preheated to 350F for 25-35 minutes until knife comes out with moist crumb. Cool. Meanwhile using stand or hand mixer, cream butter, slowly add confectioners sugar, cocoa, and a little milk for consistency. Beat well. Add extract, and beat well. Frost brownies when cool, then sprinkle with crushed peppermints before serving.
