Why I Love This Recipe

They should be slightly crispy on the outside and soft/gooey on the inside!

Troubleshooting: It’s important for the mini marshmallows to be stale so they don’t completely melt and make a liquid sugar mess.

Customize the recipe and try adding the following:

- Chopped pecans/macadamia nuts/walnuts

- Butterscotch chips instead of chocolate chips

- Sprinkles

- Use a different flavor cake mix like strawberry or vanilla

Ingredients You'll Need

1/3 cup canola or vegetable oil
1 tsp vanilla
2 large eggs
1 box chocolate cake mix
½ cup chocolate chips
½ cup stale mini marshmallows


1. In a large bowl mix the eggs, vanilla, and oil together

2. Add the box of cake mix to the wet ingredients and mix to combine

3. Add the chocolate chips and marshmallows to the mixture and fold in

4. Scoop 6 generous tablespoons of the mixture into round balls and place on a parchment paper lined cookie sheet. Give them plenty of space for spreading.

5. Place cookie sheet into preheated oven at 350*F for 10 min

6. Let the cookies cool on the pan before removing
