Chocolate Strawberry Cupcakes

Ingredients You'll Need
Chocolate Strawberry Cake:
1 box devil's food cake mix
3 eggs
1/2 C. oil
1/2 C. Tillamook sour cream
1/3 C. milk
1/2 C. strawberry puree (place berries in a blender and blend)
2 tsp. vanilla extract
Chocolate Sour Cream Frosting:
1 C. butter, softened
2 tsp. vanilla extract
1/2 C. unsweetened cocoa powder
1/2 C. sour cream
3-4 C. powdered sugar
Fresh Strawberries for decoration
Directions
Cupcakes:
1) Preheat oven to 350 degrees and line pans with cupcake liners.
2) Sift cake mix into a small bowl to remove any lumps and set aside.
3) In a large bowl, combine eggs, oil, sour cream, milk, strawberry puree, and vanilla extract.
4) Stir in cake mix.
5) Fill cupcake liners 3/4 full and bake for 17-22 minute or until an inserted knife comes out clean.
Chocolate Sour Cream Frosting:
1) Beat butter until smooth.
2) Add vanilla extract and cocoa powder and beat again.
3) Add sour cream and 2 cups powdered sugar.
4) Beat and then continue to add in more powdered sugar to reach your desired consistency.
5) Frost cooled cupcakes and top with a fresh strawberry.
