Why I Love This Recipe

Chole is a kind of curried vegetable dish made from chickpeas. Chole may be referred to as Punjabi Chole Masala or Chana Masala as it is made from white chana, a large variety of light colored chickpeas, and flavored with spicy masala seasonings.

Chole bhature is a food dish originating from northern India. It is a combination of chana masala and bhatura, a fried bread made from maida ( all purpose flour ) .

Ingredients You'll Need

3 cups Chole / Chickpeas
1/3 cup chana dal / Split Bengal Gram
4 tomatoes medium size pureed
Salt to taste
3 tsp Everest Chole masala
3 tsp Dhaniya powder / Coriander Powder
1 tsp Haldi / Turmeric
1/2 cup Water
1/4 cup oil or ghee - add more if needed
1 Big ilaichi / Black cardamom
2 Small green ilaichi / Green Cardamom
2 Tej Patta / Bay Leaf
1 Inch piece of Dal Chini / Cinnamon
3 Long / Cloves
2 tsp Jeera / Cumin Seeds
1/8 tsp Hing / Asafoetida
2 Inch piece finely chopped Ginger
2 tsp Red Chilli Powder / Finely Ground Red Pepper ( or as per the spice you can have )
1 chopped / sliced raw Onions to eat on the side
1 lemon
2 green chilies


Soak three Cups of Chole / Chickpeas overnight along with
chana dal - 1/3 cup / Split Bengal Gram . Then take 4 tomatoes and puree them. Add Salt to taste. Boil all this in a pressure cooker and keep aside.

In a bowl mix the below mentioned ingredients and make this mixture and set it aside for 5 minutes.
Everest Chole masala , Dhaniya / Coriander powder , Haldi / Turmeric and Water

In a pan add oil or ghee , then add to warm oil/ghee , Big ilaichi / black cardamom, Green ilaichi / Green Cardamom , Tej Patta / Bay leaf , Dalchini / Cinnamon , Long / Clove , Jeera / Cumin Seeds , Hing / Asafoetida . Cook for a minute until jeera is popped and right colour . Then add finely chopped ginger to the masala . Add lal mirch powder / red pepper powder first then add the water to the spice mixture and continue to cook until the oil is released.

Add the prepared Chole mixture from the pressure cooker and continue to cook on slow heat for as long as you need to. Once it reaches the right consistency turn of the heat. Serve with chopped raw Onions, lemon, green chilies.
