24 Jalapeno Peppers
3/4 lb. uncooked chorizo
1 small onion chopped
8 oz. cream cheese, softened
1/2 c. shredded Italian cheese blend
1/2 c. shredded Mexican cheese blend
2 T. minced fresh cilantro
2 T Lime juice
2 garlic cloves, minced
Directions
Cut Jalapenos in half lengthwise and remove seeds and membranes
In a small skillet, cook chorizo and onion over medium heat until meat is fully cooked and onion is tender, drain
Place in a small bowl; add the remaining ingredients.
Stuff mixture into pepper halves, a scant tablespoonful in each
Place on greased baking sheet. Bake at 350 F for 20 minutes or heated through.
