"Great addition to beans, peas, and as a topping on hotdogs and sausages."

Why I Love This Recipe

This is definitely a southern staple that goes good in peas, on hot dogs and sausages, or really on anything that needs that extra pop.


Ingredients You'll Need

7 lbs tomatoes of varying ripeness, coarsely chopped
6 lbs green cabbage, finely chopped
6 large onions, finely chopped
6 large bell peppers (3 green, 3 red)
12 hot peppers (such as jalapenos), chopped fine
4 cups white vinegar
2 tsp pickling spice, wrapped in cheesecloth


Directions

Combine ingredients in a non-reactive pot and bring to a boil on medium heat. Stir often.


Once at a rolling boil, lower heat and continue to simmer until most of the liquid has evaporated. Be sure to stir often to prevent sticking.


Remove from heat and allow to cool before placing in a sealable glass container and refrigerated.
