Cilantro-Lime Dressing- 3 Ways

Why I Love This Recipe
FEATURING: Cilantro and garlic scapes (or garlic).
This easy cilantro lime dressing is great as a topping for salads, tacos, taco bowls and roasted veggies (oven or BBQ). To make it creamy, add 1/2 avocado or yogurt of your choice to the base recipe!

Ingredients You'll Need
2 cups fresh cilantro
1 garlic scape, chopped (or 1 garlic clove, peeled and minced)
¼ cup lime juice
½ teaspoon ground coriander
½ teaspoon sea salt
½ cup extra-virgin olive oil
1-2 teaspoons maple syrup or honey (optional- I usually leave it out)
MAKE IT CREAMY (optional):
1 avocado or ½ cup plain Greek yogurt (or plain vegan yogurt)
Directions
In a food processor, place the cilantro, garlic, lime juice, maple syrup (if using), coriander, and salt and pulse to combine. With the blade running, pour in the olive oil and process until smooth.
MAKE IT CREAMY (optional) - blend with 1 avocado or ½ cup plain Greek yogurt (or plain vegan yogurt).
