2 pounds pork, cubed
1/2 cup flour
1/4 cup cornstarch
1/2 cup water
1 teaspoon salt
1 egg
2 cans (20 ounce) pineapple chunks drained;, keep juice
1/2 cup brown sugar
1/2 cup vinegar
1 teaspoon salt
2 teaspoons soy sauce
2 carrots, cut diagonally
1 clove garlic
2 tablespoons cornstarch
2 tablespoons cold water
1 green papper, chunked
Directions
Heat 1" of peanut oil. Blend flour, cornstarch, water, salt and egg with hand beater till smooth; stir pork into batter until coated. Cook in oil. Fry until brown (about 5 minutes). Drain.
Add water to pineapple juice to make 1 cup. Heat with brown sugar, vinegar, salt, soy sauce, carrots, garlic to boiling in dutch oven. Reduce till carrots are somewhat tender. Mix 2 tablesponns cornstarch and 2 tablespoons water. Add to sauce to thicken. Add pork, pineapple, green pepper and heat to boil. Serve with rice
