Cinnamon Carrot Muffin-like Cookies [Muffies?]
Why I Love This Recipe
I mentioned before my hate for big old Imperator carrots.
This is a further adventure in carrot killing.
Ingredients You'll Need
1 cup butter, softened
1.5 cups white sugar
1 1/2 tablespoons molasses [Or syrup. Isn't cooking with me fun? You substitute everything XD]
2 1/4 cups all-purpose flour
1 1/8 teaspoons baking soda
2 tablespoons ground cinnamon
1 teaspoon nutmeg
1 cup of finely grated carrots
[You may want to add lemon zest, but that's you boat floating choice]
Preheat oven to 350 degrees F.
Cream together butter and sugar.
Mix in egg and molasses, blending well.
Mix flour, baking soda, carrots, nutmeg, and cinnamon; add to creamed mixture, mixing well.
Drop by ice cream scoopfuls into a greased muffin pan.
Bake for 10 to 12 minutes.
