Ingredients You'll Need

1 cup jasmine white rice
2 cups water
1/2 teaspoon salt
1 medium orange (zested and juiced)
1 medium lime (zested and juiced)
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
1/4 teaspoon black pepper


Directions

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
In a medium saucepan, bring the water and salt to a boil over high heat.
Once boiling, add the rice, stir briefly, and reduce the heat to low; cover with a lid and simmer for 20 minutes or until the water is absorbed.
While the rice cooks, zest and juice the orange and lime, keeping them separated.
Once the rice has finished cooking, remove it from the heat and let it sit covered for 5 minutes.
Fluff the rice gently using a fork, then add the olive oil, orange juice, lime juice, orange zest, lime zest, cilantro, and black pepper.
Mix gently until the flavors are incorporated.
Serve warm.


Pairs Well With

Pairs excellently with a light white wine like Sauvignon Blanc for an adult feast, or an icy lemon soda for a non-alcoholic zest.
