Why I Love This Recipe

I found this recipe in a supplement to the Sunday newspaper years ago and it quickly became my favorite cobbler recipe. The lemon juice and orange juice lends a tang to the sweet treat that makes it irresistible.


Ingredients You'll Need

2 1/2 cups flour
3 Tbsp. sugar
1 tsp. salt
1 cup shortening
1 egg
1/4 cup ice water
6-8 cups sliced peaches (frozen or fresh)
1/4 cup lemon juice
3/4 cup orange juice
2 cups sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 Tbsp. cornstarch
1/2 cup butter


Directions

Sift flour, sugar and salt. Add shortening and mix until crumbly. Whip egg and water together then sprinkle over flour mixture. Form a dough and chill for 30 minutes. Roll out 1/2 of dough and put over bottom and 1/2" up sides of 9"x 13" baking pan. Bake 20 minutes at 350 degrees F.


Meanwhile prepare filling. Combine peaches, lemon juice, orange juice and butter in a medium saucepan.


In a separate bowl, mix sugar, spices and cornstarch. Heat peach mixture until butter is melted then stir in dry ingredients. Remove from heat.


Pour filling into crust. Roll remaining dough and cut into strips. Place strips over filling, sprinkle with 1 Tbsp. sugar and 1 Tbsp. melted butter.


Bake 35-40 minutes.
