Until looking it up, I had never heard of Gumbo Soup, which is interestingly the 'National Soup of the U.S.', which looks pretty good.
Ingredients You'll Need
1 lb shrimp, peeled and deveined
1 lb smoked sausage, sliced
1/2 cup all-purpose flour
1/2 cup vegetable oil
1 large onion, diced
1 green bell pepper, diced
3 stalks celery, diced
4 cloves garlic, minced
1 (14.5 oz) can diced tomatoes, undrained
4 cups chicken broth
2 cups okra, sliced (frozen okra can be used)
2 tsp Cajun seasoning
1 tsp dried thyme
1 tsp smoked paprika
1/4 tsp cayenne pepper (optional)
4 cups cooked white rice, to serve
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Directions
1. In a heavy-bottomed pot or Dutch oven over medium heat, make a roux by stirring together the flour and vegetable oil. Stir constantly for about 20–30 minutes until it achieves a rich, dark brown hue like chocolate.
2. Quickly add the onion, bell pepper, and celery to stop the roux from cooking further. Sauté these vegetables until tender, about 5–7 minutes.
3. Stir in the minced garlic and cook for an additional minute.
4. Pour in the diced tomatoes and chicken broth. Stir well to combine.
5. Add the okra, Cajun seasoning, thyme, smoked paprika, cayenne (if using), sausage, and shrimp.
6. Simmer the gumbo over low-medium heat uncovered for about 30 minutes until thickened, stirring occasionally.
7. Taste and adjust the seasoning with salt and pepper.
8. Serve over a bed of rice with a sprinkle of fresh parsley on top.
