Why I Love This Recipe

If you want to thicken the soup you may add 1 TBSP corn starch diluted.

Ingredients You'll Need

1 onion chopped
4 garlic cloves minced
dash of olive oil
1 pound mushrooms
1/2 pound spinach
4 cups vegetable broth
14 oz. coconut milk
handful parsley chopped
salt and pepper to taste


In pot sauté onions and garlic in olive oil.

Add mushrooms and cook in medium heat until mushrooms are soft.

Add spinach one handful at a time and stir allowing each handful to wilt.

Add coconut milk and stir.

Add flour to thicken.

Add parsley and stir.

Add salt and pepper and cook and stir for 1 more minute.
