Why I Love This Recipe

Flatbreads have been a staple in many cultures for thousands of years, with some of the earliest known examples dating back to the ancient Egyptians, who used a simple combination of flour and water to create their version of flatbread.


Ingredients You'll Need

2 cups (250g) all-purpose flour
1 cup (240ml) coconut cream, divided
1/4 cup (50g) granulated sugar
1/2 teaspoon salt


Directions

In a large mixing bowl, whisk together the flour, sugar, and salt.


Add 3/4 cup (180ml) of the coconut cream and stir until a shaggy dough forms.


Turn the dough out onto a lightly floured surface and knead for 3-4 minutes, until smooth and elastic. If the dough seems too dry, add a tablespoon or two of the remaining coconut cream.


Cover the dough with a damp towel and let it rest for 30 minutes.


Preheat a large skillet or griddle over medium heat.


Divide the dough into 8 equal pieces and roll each one into a ball.


Using a rolling pin, roll out each ball into a thin round flatbread, about 6-7 inches in diameter.


Cook the flatbreads one at a time in the hot skillet or griddle, for 2-3 minutes per side, until lightly golden and cooked through. Keep cooked flatbreads warm in a clean kitchen towel while you cook the remaining ones.


Serve the flatbreads warm, brushed with the remaining coconut cream, if desired.


Pairs Well With

A refreshing mango lassi or a spicy chai tea latte would be a delightful accompaniment to these coconut cream flatbreads.
