Coconut Easter Eggs

Why I Love This Recipe
A favorite of my Mom's...she made eggs every year.
And forget the mixer...you must mix these by hand.
It's a texture thing.
Ingredients You'll Need
7 cups powdered 10X sugar
3 cups flaked coconut
2 sticks butter
1 can evaporated milk (one can is more than enough)
Dipping chocolate
Directions
Place 10X sugar in a large bowl.
Add butter and work into sugar by rubbing between palms of hands.
Add coconut and mix well
Add enough milk (a little at a time) until candy forms a soft ball.
If it's too wet, add more sugar.
Work candy until smooth and creamy by kneading it like bread dough.
Form into small eggs and place on cookie sheet covered with parchment paper, and refrigerate for about an hour.
Melt chocolate - Be careful not to overheat it...I've ruined my share of chocolate when I first started making these.
Dip eggs, and place on cookie sheet with clean parchment paper
Mom used to let them almost set up then dip them again...
