Coconut Flour Pumpkin Muffins

Why I Love This Recipe

Ingredients You'll Need

1/4 cup Coconut Flour
1/2 cup Oat Flour
1/4 cup sugar
1/4 tsp Salt
1/2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Ginger Spice
1/4 tsp Clove Spice
1 cup Pumpkin Puree
1/2 cup Honey
1/4 Coconut Oil
1/4 cup of Apple Sauce
3 Eggs


1. Preheat the oven to 350 degrees F (175 degrees C).

2. Mix all the dry ingredients in a large bowl, stir with a fork then add all the wet ingredients with a spatula until they are combined together well.

3. Spoon batter into 12 paper-lined or greased muffin cups, filling the cups 2/3 full.

4. Bake 28-30 minutes or until fork or toothpick inserted in a muffin's center comes out clean.
