Why I Love This Recipe

I'm a member of the Coffee-Mate Brew Crew (aka... a Coffee-Mate lover :D) and I love oatmeal cookies and cinnamon buns, so obviously this recipe is tops in my book (though I don't really like raisins... so I leave them out, but you can leave them in if you want).

Ingredients You'll Need

2 sticks unsalted butter, softened
1 c light brown sugar
1 c granulated sugar
2 large eggs
1 3/4 c whole wheat flour
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp fresh ground nutmeg
3 c rolled oats
1 1/2 c raisins
1/4 c Cinnamon Bun Coffee-mate (liquid)

1. Adjust oven racks to the lower and middle positions

2. Preheat oven 350F

3. In mixing bowl, beat butter until creamy

4. Add both sugars; beat until fluffy, about 3 minutes

5. Beat in eggs one at a time

6. Mix flour, salt, baking powder, and nutmeg together

7. Stir flour mixture into butter-sugar mixture with wooden spoon or large rubber spatula. Stir in oats, Coffee-Mate, and raisins (optional).

8. Form dough into 16-20 two-inch balls

9. Place each dough round onto parchment paper-covered cookie sheets

10. Bake for 22-25 minutes

11. Take out of oven and let cool for about 30 minutes

12. Enjoy!
