Cold Rice Salad

Why I Love This Recipe
Ingredients You'll Need
4 c cooked rice (regular not minute)
½ c chopped onion
½ c celery finely chopped
½ c diced, seeded cucumber (leave green skin on)
¼ c finely diced green pepper
Mix and Toss w/ rice and veggies:
2 T wine vinegar
6 T EVOO
1 ½ tsp salt
12 grinds of pepper mill
Directions
Sprinkle w/ a little tarragon and parsley
Remove from fridge one hr before serving.
