Comfort Lentil "Meat" Loaf

Why I Love This Recipe
I came up with this recipe after making a ton of lentils and needing something to do with a whole pot of green lentils. There is a topping as well, which adds to the comfort part of this meal for me.
This also tastes great the next day- like "real" meat loaf does. Also- I hate using the term loaf- but I can't think of anything else to call this recipe. If you have any ideas, let me know!
Ingredients You'll Need
4 Cups Cooked Lentils
3 Cups Bread Crumbs
2 Egg Replacer eggs
1/4 Cup Olive Oil
1/2 Red Onion, diced
2cloves garlic
1 tsp chopped savory
1 tsp onion powder
1 tsp celery salt
salt & pepper to taste
Tomato Topping:
3/4 Can tomato paste
4 TBS tamari
splash liquid smoke
1 tsp garlic powder
Directions
Preheat oven to 350. In a large bowl combine all ingredients until it is thoroughly mixed and sticky. Put the lentil mixture into a lightly greased loaf pan.
Tomato Topping: Mix well in a small bowl. Spread on top of the lentils.
Bake the loaf for about 40 mins. Allow to cool before cutting. This also tastes great the next day- like "real" meat loaf does. Also- I hate using the term loaf- but I can't think of anything else to call this recipe. If you have any ideas, let me know!
