Why I Love This Recipe

This is a good way to use leftover vegetables.

Serves 4 (82 calories and 3 grams per serving).


Ingredients You'll Need

2 medium bakeing potatoes
1 small carrot
1 stalk broccoli
3 to 4 tablespoons 1 percent milk
1/4 cup shredded lowfat
Colby cheese
2 teaspoons margarine


Directions

How to fix:


1. Rub potato skins with vegetable oil. Bake at 400'F untill potatoes are soft when squeezed, about 40 minutes. Cool untill lukewarm.


2. Peel broccoli stem and carrot . Chop finely. Boil in small amount of water untill just tender.


3. Carefully slice potatoes in half. Scoop potato into bowl. Add broccoli,carrot,milk,half of cheese, and all of margarine. Mash. 4. Pile mixture into potato skins.


Sprinkle with remaining cheese. Reheat at 350'F. Serves 4 (82 calories and 3 grams per serving).
