Congo Bars

Why I Love This Recipe
This one came, originally, from a family at our church. It’s a great “blonde brownie”. No one seems to know where the name originated.
Ingredients You'll Need
¾ C. shortening
1 lb. brown sugar
3 eggs
2 ¾ C. flour
2 tsp. baking powder
½ tsp. salt
1 C. (or more) chocolate chips
½ C. chopped walnuts or pecans
(optional: 1 C. butterscotch chips)
Directions
Cream the shortening with the sugar and the eggs until very well mixed.
Stir in the flour, baking powder and salt.
Stir in the chips and nuts. Pour into a greased 9x12” baking dish.
Bake at 350 degrees F. for 35-40 min. or until center is almost set.
Cool completely before cutting into squares.
