Ingredients You'll Need
2 Tbsp oil
1 large onion, chopped
2 celery stalks, chopped
2 medium carrots, chopped
3 potatoes, diced
3/4 tsp salt
2 cups chicken stock
2 cups milk
1 can (341 mL/12 oz) whole kernel corn
1/2 cups shredded mozzarella cheese
Heat oil in a pot and saute the onions, celery, and carrot until soft.
Add potatoes and seasoning with the chicken stock.
Gently boil for 15 minutes, covered.
Add milk and corn.
Cover and simmer for 5 minutes.
Add cheese and serve.
