Why I Love This Recipe

One of our church friends made this after Papa passed and we all enjoyed it so much it has become a holiday tradition for our potluck family meals.

Ingredients You'll Need

2 box Jiffy cornbread mix
1 can Cream Corn
4 oz. Cream Cheese
1/3 cup Heavy Cream instead of milk in the Jiffy instructions
1 jalapeno de-seeded and chopped; fresh or jarred (optional)
1 stick real butter melted
2 eggs


Mix ingredients well and pour into a baking dish. Cook at 350 for 45 minutes, will be soft in the middle like pudding.
• For a dessert version, instead of jalapeno, use ¼ tsp each; cinnamon, nutmeg, and cloves.
