Ingredients You'll Need

1-1 1/3 pounds mild Italian sausage, casings removed
1 onion, chopped
3 cloves garlic, minced or finely chopped
1 teaspoon chili powder
1 (15-ounce) jar pizza sauce
1 (8.5-ounce) box Jiffy corn muffin mix
1 cup (4 ounces) finely shredded Mozzarella cheese


Heat oven to 400 degrees. Mist a 13- by 9-inch baking dish with non-stick spray and set dish aside.

In a large skillet, cook sausage and onions, breaking up sausage as it cooks. Pour off accumulated fat if necessary. Add garlic and chili powder, stir and cook for another 1-2 minutes. Stir in pizza sauce, reduce heat and simmer for 10-15 minutes, uncovered.

Mix cornbread according to directions on the box, and spread the batter on the bottom of prepared baking dish (an offset spatula makes this easier). Top with sausage mixture. Bake 15 minutes, remove from oven, sprinkle cheese over top, and return to oven to bake an additional 10 minutes.

Remove from oven, cut into rectangles and serve
