Why I Love This Recipe

Couscous is primarily a staple for Northern African countries.

Couscous is known as the national dish for Northern Africa.


Ingredients You'll Need

1 1/4 cup vegetable broth
1 cup couscous
2 TBSP lemon juice
3 TBSP olive oil
salt and pepper to taste
bunch of mint chopped
2 tomatoes - one tomato diced and the other sliced for garnish
1 cucumber diced
few lettuce leaves for garnish


Directions

In pot bring broth, cous cous, lemon juice, olive oil, salt and pepper to boil then remove and cover for 5 minutes.


Stir and fluff.


Add mint, tomatoes and cucumbers and stir.
Use tomato and lettuce for garnish.
