Ingredients You'll Need

11/2 Cups whipping cream
4 Egg yolks
1/4 Cup granulated sugar
1 Teaspoon vanilla extract
4 to 6 Teaspoons granulated sugar, for caramelizing


Directions

Preheat oven: to 325 degrees F. Set 4 ramekins in a baking dish. In a saucepan, warm crème on medium-high heat until small bubbles form around edges of pan. Whisk egg yolks and sugar. When crème is hot, slowly whisk into eggs and add vanilla. Strain for any scrambled egg and divide evenly among the four ramekins. Pour boiling water in the baking dish, surrounding the ramekins, and bake 30-35 minutes. Cool on racks and then refrigerate 2 hours with plastic wrap enclosing the individual ramekins. To serve, sprinkle with sugar and torch to caramelize.
