Ingredients You'll Need
10 baking potatoes (about 4 lbs), peeled and cut into 1-inch cubes
5 cloves garlic, peeled
1/4 cup kosher salt
1 1/2 cups (3 sticks) unsalted butter, cut into pieces
Pepper
1/2 lb Dungeness or other lump crabmeat
1/2 lb goat cheese, crumbled
Directions
1. Preheat the oven to 350 F. Bring a large pot of water to a boil. Add the potatoes, garlic and salt, and cook until the potatoes are fork-tender, about 10 minutes. Drain
2. Working quickly, force the potatoes, garlic and butter through a food mill (or ricer) into a large bowl. Add salt and pepper to taste.
3. Spoon the puree into a 3- or 4-quart casserole. Bake for 20 minutes. Sprinkle the crab over the potatoes, then sprinkle with the goat cheese. Return to the oven and bake for 10 minutes, or until hot and bubbling.
