Directions
Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
Beat in the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
Gradually add the flour and mix until just combined. Fold in the cranberries and chopped nuts.
Pour the batter into the prepared baking pan and spread evenly. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
While the cake is cooling, prepare the cream cheese frosting. In a mixing bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
Once the cake has cooled, spread the cream cheese frosting over the top. Drizzle the melted white chocolate over the frosting and sprinkle with dried cranberries for garnish.
Chill the cake in the refrigerator for at least 1 hour before serving. Slice and enjoy!
